Thank you Mexico...

...for handing the French an ass kicking on this day 1862. :-)

Amos said that they were having nachos for dinner, which got me thinkin'....I wanted nachos, too! What you're about to witness is a feast of epic proportions, but bear in mind we do not eat like this every night. I wish we did. I wish we could. But, only a few holidays a year allow us to pig out. So, I cranked up the tunes, put on my favorite housepants, and got down to work!

My new love affair with Fuerte avocados...

While waiting for Belov-Ed to arrive home from work, I admired the finished product. Time to start workin' on the nacho building skills...

Oh, must not forget to feed my golden babies! Look at Mighty Achilles! He's standing all on his own, not swaying or stumbling, wagging his tail...happy sweetface. I tried dancing with him, but I think it freaked him out. Nick used to looove dancing with me, but Achilles & Milo....mmmm, not so much.

And THE YUMMY ONE arrives home, bearing chips and cheese, unaware that I had a hidden camera awaiting his arrival......bwa-ha-ha-ha-haaaaaa....(insert devilish grin of mine right here)......Laura called right before I got the nachos in the oven, and right when I decided to video my Achilles, captivated by the aroma of a GIANT platter of nachos!!!

After some phone calls, cleaning up, a Corona Light, and some music & dancing, we finally got down and dirty with our Cinco de Mayo grub-fest. Now, we're enjoying "Fantastic Four: Rise of the Silver Surfer". (Shhh. Don't tell anyone our little secret...that we're both undercover comic book geeks!)

What a great way to end a crazy ass Monday, huh? Outstanding!

mmm...those looked yummy! I, too, made some guac tonight. I originally was going to bring it to the bar, but then I ended up eating it for dinner. So, I just drank when I got there. Actually, I'm still pretty buzzed, which is not good cuz I've got to get up in about 5 hours :( But, it was a great Cinco de Mayo! The margaritas were awesome! Next Cinco, we should plan to be together, SOMEWHERE, and celebrate together!!

Corona lite is the best.

What a fantastic platter of nachos! The guac looks great too, but best of all is seeing that you slipped in a photo of Belov-Ed in his SUIT! He looks so distinguished! Thanks for catching the moment and sharing with us. Looks like a good time was had by all. (If it was warmer here, I'd like a margarita, too, but we are back in the 50s again.)

Any excuse for a party is a-okay in my book! Thanks again to the French army for losing yet another battle. They should stick to making crepes and leave the nachos to the pros. When is Waterloo Day? I always forget that one.

Oh my that guacamole looks good.
I think God invented guacamole as one of nature's "perfect foods", don't you? My mouth is literally watering looking at it.....

Your cinco de mayo was much better than mine... I took the exam and then came home and ate salsa and chips. I will have to make up for lost time!
